The Rise of the Sourdough People

I am now almost certain that I live in the sourdough capital of the world. Not a sourdough capital. The capital. Every town within a 15-mile radius has at least three bakeries. Every bakery has sourdough. Some bakeries have only sourdough, as if the other breads were exiled in some tragic gluten purge and now live in a quiet witness protection program somewhere with the crumpets.
